はやし Hayashi: tokyo heaven

This is, hands down, my favorite spot in Shibuya. Which makes it one of my favorite ever.


Hayashi is a single counter run by a husband-wife team, open only for 4 lunch hours a day.


A tonkotsu-gyokai blend, in a beautiful golden hue.

Ajitama ramen (900yen)

Some bowls taste too fishy, others too porky. Hayashi's bowl is refined, with the pork blended smoothly with the smoky dashi, and just a little bit of yuzu citrus on top for zest.


Perfection.


Definitely get the egg. It's one of the best you'll ever have.


Sometimes perfection needs few words. Take a weekday off and go to Hayashi. You'll remember it.


Apparently if you tell the shopkeep to make the bowl "shio aji," they'll give you a shio version of their ramen instead. I will be back.
